Cane & Bean Lime and Ginger Marinaded Roast Chicken Recipe

Serves 4-6 people

Ingredients:

  • 1 whole chicken (about 1.8-2.2 kg)
  • 80 ml Cane & Bean Lime syrup
  • 2 tsp Cane & Bean Ginger powder
  • 30 ml olive oil
  • 1 tbsp ml soy sauce
  • 2 tsp honey
  • 2 garlic cloves, finely chopped
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Method:

Preheat the Oven:

Preheat your oven to 200°C.

Prepare the Chicken:

Pat the chicken dry with paper towels and place in a roasting pan.

Make the marinade:

In a bowl, whisk together the Cane & Bean Lime syrup, Cane & Bean Ginger powder, olive oil, soy sauce, honey, chopped garlic, thyme, rosemary, salt, and pepper.

Marinade the Chicken:

Brush the chicken all over with the marinade (reserving some glaze for basting) cover with foil and leave to marinade for a minimum 30 minutes.

Roast the Chicken:

Place the chicken breast-side up on a rack in a roasting pan.

Roast the chicken for 60-75 minutes, basting with the reserved marinade every 20 minutes, until the skin is golden brown and crispy, check the chicken is cooked through.

Rest and Serve:

Remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Serve the chicken, using the pan juices to create a rich gravy.
